This recipe comes to us courtesy of RHF member and 8 Week Challenge participant Marvin Eng. Just one of the perks of attending an 8 Week Challenge potluck: getting to sample all the delicious and nutritious creations by other participants!
1-2 cloves garlic (minced)
1/4 tsp salt (or to taste)
1/4 tsp black pepper (or to taste)
1 tbsp Dijon mustard
1-1.5 tbsp honey (or to taste)
6 tablespoons balsamic vinegar.
1/2 cup olive oil
Optional Step (In case you don't like raw garlic): Heat a small pan on medium low heat. Add olive oil, minced garlic and salt to the hot pan. Cook garlic until slightly browned/toasted. DO NOT BURN THE GARLIC. Remove from heat and cool to room temperature. Separate garlic and oil. Save oil for later.
Step 1: Combine in a bowl: garlic, Dijon mustard, honey, salt and pepper. Whisk together until well blended.
Step 2: Add balsamic vinegar and whisk until well blended with other ingredients.
Step 3: As you whisk, slowly add the oil to the other ingredients. Try not to add too much at a time or else it gets difficult to combine. If done correctly, the dressing should be an emulsion (completely blended). If the oil is just sitting at the top of the dressing, you need to whisk more. Alternatively, you can put all the ingredients in a jar and just shake it up.
Taste your dressing throughout the process. Adjust the amount of honey, mustard, vinegar or salt and pepper depending on your personal preference. If you think the dressing is too thick, add more oil. If it is too oily, add more honey or Dijon mustard.
1/2 package of cherry or grape tomatoes. Cherry tomatoes need to be cut in half, grape tomatoes do not
1/4 cup of sliced red onion
1-2 handfuls of fresh basil leaves. Thinly sliced to make them look nice.
1-2 handfuls of walnuts
10 cups of baby spinach (or kale, mixed greens, lettuce, etc.)
Other optional ingredients: Mushrooms, bell peppers, apples, chicken, Parmesan cheese, whatever you like!
Step 1: Mix all the ingredients in a big salad bowl
Step 2: Drizzle on dressing right before serving
Step 3: Toss salad
