Healthy Pancakes

1  cup ground oatmeal
3/4 cup ground flax seed
1/2 cup spelt flour (or any other flour)
3  teaspoons baking soda
3 eggs
2+ cups milk/water (adjust as needed)
1   tablespoon vinegar
Mix dry ingredients. Mix wet ingredients. Add wet ingredients to dry ingredients. Don't over stir. Let batter sit while the pan warms up. Makes 7 - 9 large pancakes.
